Shrimp Scampi

This healthy and much lighter version of shrimp scampi comes from the Mayo Clinic website! It was quite tasty and really easy to make. I used whole grain pasta for mine, but I boiled some regular angel hair pasta for Greg. Both are good.
Also, the recipe did not call for tomatoes, but I really like tomatoes and thought that they would add to the recipe. So I put in almost a full can of crushed tomatoes. Turns out that I was right. I think it improved the dish.

I loved the freshness of it, which I think is due to the lemon juice. You can detect a slight hint of the citrus, but it isn't overpowering. I also love that it only has 335 calories per serving and tons of protein!

Mmmm... nice... so, let me ask you... which type of whole grain pasta do you use and is it good? My experience with whole grain pasta has not been good. I usually buy the kind that just has the added omega's and protein in it and shy away from the whole grain.

Oooh...yeah. Barilla is good. I love that, but I usually try to go for the whole grain and I just pick up whatever is on sale. I like it...I think that it's an acquired taste...
