This is almost like a chili. It's delicious.
Santa Fe Soup:
1 lb of ground turkey breast
1 large onion, chopped
1 packet dry ranch dressing mix
1 packet of dry taco seasoning
1 can of diced tomatoes
1 can of rotel
1 can of black beans, drained
1 can of pinto beans, drained
1 can of kidney beans, drained
1 can of shoepeg corn
1/2 cup of water
Brown the turkey in a large pot. Remove from pot and then sautee your diced onion in the same pot with a little olive oil. Add the turkey back to the pot, and then stir in the ranch dressing packet and the taco seasoning packet. Then add the remaining ingredients. You can eat it once it's all heated through. No need to really simmer or anything unless you just want to.
I always garnish with light sour cream, cheese, and jalepenos. And its good with corn chips, tortilla chips or cornbread.
