Ground Turkey Enchiladas

A couple of years ago, I started using ground turkey in the place of ground beef. It's better for the body and better for the Earth! I still love red meat and some recipes are just waaay better with it, but I've found that turkey is a good, healthy substitute a lot of the time.

Yesterday I came across this recipe for enchiladas. It's pretty different from any enchilada recipe I'd ever seen...so I tried it out!

The Ingredients:
1 1/2 lbs ground turkey
1 pkg frozen spinach - thawed and drained
2 cups salsa
1 can diced tomatoes
1 pkg flour tortillas
2 cups Mexican blend cheese (I used low-fat)
1 8 oz. block cream cheese (fat-free worked just fine!)
ground cumin to taste

What to do:
Cook ground turkey in skillet until no longer pink over medium heat. Add drained spinach and 1 cup of salsa to turkey and cumin to taste (about 1 tsp). Cook about 5 minutes until all liquid is absorbed.

Remove from heat and add cream cheese. Mix until melted.
Lay flour tortilla flat and place 1/3 cup mix, roll and place in greased 13x9 inch pan with flat side up. Bake for 20 minutes at 350 degrees.

Remove from oven and top with 1 cup salsa mixed with can of diced tomatoes and additional cumin to taste. Top with cheese. Return to oven for 5 minutes until cheese is melted.

Ok, you can usually bet your money on me screwing up a recipe simply because I didn't read it thoroughly enough. I mean, I do it so much, you think I'd have learned my lesson by now. Apparently not. Instead of saving one cup of salsa to mix with the diced tomatoes for the top, I put all the salsa into the turkey mix. Oops. So I just put tomatoes on top, minus the salsa.

Yummy!!

Yum!!!! That looks great! I'll definitely try that! Do you ever use the whole wheat tortillas?? Thats all I use now and they are great!

Wait... you mean you can actually use those heart measuring spoons from your wedding??? I have mine still in the box in my bedroom, I didnt know you could really use them!!!!
