Recipe: Creamy Squash and Onions

I have a confession.

I RARELY cook anything for dinner. I mean... I eat dinner... it just doesn't require any cooking. My repetoire of dinners lately: Sandwiches, tuna salad on crackers, and salad... and it's kind of a shame, because I actually love food and veggies. I just hate cooking for myself. Seriously.. even when I make something, I don't enjoy sitting down and eating it. Basically, in order to eat actual dinners, I need to have a dinner party every night or something. That's the only way I'll cook... if I have someone else over.

So, I feel guilty that I'm probably not getting as many veggies as I need. Sure, I eat fruit for breakfast and drink a glass of v8 (which has 2 servings of veggies per glass)... but, is that really enough? No. It's not.

Sunday... I was determined to actually cook a meal for myself and enjoy it. I rummaged around my freezer and found some frozen yellow squash. First off, I have to tell you that yellow squash is my favorite vegetable. Always has been. Always will be. At first I thought of a yummy squash casserole with some cheese and breadcrumbs... and then I realized that not only would that require too much effort, it wouldnt be very healthy either.

So, I came up with my own little dish.

It's creamy, delicious, and easy!

Creamy Squash and Onions

Yellow Squash (I used frozen)
Onions
Light Alfredo sauce (I used buitoni)
Salt & Pepper

Cut up some onions and saute the onions and squash in olive oil on the stove. When both are fork tender, stir in some light alfredo sauce and season to taste.

Yum! I'll have to try this! I had some yellow squash the other night and it was so good and fresh tasting.

Sounds good...I like to put squash, onions and zuchinie together sauteed up and then dribble a little chedder over top...yum yum. I've never tried with alfredo sauce, but looks yummy.

Tasty! I'm like you Amy that I really don't like cooking for myself either. Just too much effort. But I have forced myself to make a big meal on Sundays that I can eat off of during the week. Gotta love those leftovers!
